Barrell Craft Spirits, founded in Louisville in 2013, operates as a blending and finishing house — sourcing aged whiskey from multiple distilleries, then applying its own finishing program. Seagrass’s rye base receives three successive finishes: Martinique agricole rum casks (grassy, sugarcane-forward tropical and vegetal notes), then Madeira wine casks (oxidized dried fruit and nutty complexity), and finally Apricot Brandy barrels (stone-fruit sweetness and brandy warmth).
