THE NOSE

The delicate nose unfolds in swaths of color. The green of eucalyptus, mint and vetiver, the yellow-orange of mirabelle plums, apricot and orange blossom, the brown of pepper, cardamom and licorice sticks, and finally silvery saline and toasty hues.

THE PALATE

The mouthfeel is elegant, expressing luxuriant simplicity and precision. The attack is enveloping and ethereal. The refined and silky foundation becomes more pronounced at the heart. The finish is dominated by a salinity that leaves a deep sensation of consistency.

This complex Champagne combines coffee bean, lemon peel, burnt sugar, chalk, barley candy and tarte tatin aromas. Fine bubbles carry lemon leaf and Mirabelle plum flavors, while grapefruit bitterness provides tension. Integrated acidity and a toasted finish keep the medium-bodied palate energetic and composed.

Glazed apple, mandarin peel, grapefruit pith and crème de cassis ride a finely detailed mousse. Pastry, almond, smoke and vanilla add richness through the middle of the palate. The Champagne remains fresh and focused through a long, resonant finish.
