El Pandillo is one of the most respected highland distilleries in the additive-free movement. Felipe Camarena cooks agave in custom stone ovens, ferments with proprietary natural yeasts passed down from his grandfather, and distills in small copper pot stills. The standard 80-proof Blanco is the most approachable expression of that traditional process — creamy and spicy texture, cooked-agave depth, and the distinctive highland minerality the distillery is known for.
